Step Tip
① White Sponge (Outer Layer) Whip egg whites thoroughly for a fluffy, moist texture. Avoid overbaking to keep it soft.
② Matcha Sponge (Inner Layer) Sift matcha powder to prevent clumps. Tap the pan gently before baking to release air bubbles.
③ Cream Filling Whip cream to soft peaks (70%) so it holds shape without spilling. Add matcha gradually if desired.
④ Powdered Sugar Finish Once cooled, dust evenly using a fine sieve. Avoid humidity to keep the surface dry and clean.
