Dough (Matcha Batter)

Ingredient Amount Notes
Cake flour 120g Sifted
Baking powder 4g 1 teaspoon
Sugar 60g Granulated
Matcha powder 8g Baking grade
Egg 1 Room temperature
Milk 80ml Slightly warmed
Vegetable oil 20ml Neutral oil

Red Bean Filling (Center)

Sweet red bean paste (anko) 180g About 30g per bun

2:How to Make the Matcha Dough



How to Make the Matcha Dough

Step Description
1 Sift cake flour, baking powder, and matcha powder together.
2 In a bowl, whisk egg and sugar until pale and fluffy.
3 Add milk and vegetable oil, mix well.
4 Add the sifted dry ingredients and gently fold with a spatula. Do not overmix.
5 Pour the batter evenly into molds.

How to Make Sweet Red Bean Paste (Chunky Anko)

Step Description
1 Rinse azuki beans and boil briefly, then discard the water.
2 Add fresh water and simmer until beans are soft (about 40–60 minutes).
3 Add sugar and simmer over low heat until thickened.
4 Once desired consistency is reached, remove from heat.
5 (Optional) Add a pinch of salt to enhance flavor.

 

3:How to Steam Matcha Buns



Step Description
1 Bring plenty of water to a boil in a steamer and create strong steam.
2 Place the batter-filled molds into the steamer (wrap the lid with cloth to prevent dripping).
3 Steam over high heat for 10–12 minutes until the buns rise and the surface looks set.
4 Insert a toothpick; if it comes out clean, they are done.
5 Remove from the steamer and let cool before taking them out of the molds.
