Matcha Crêpe Batter

Cake flour 80g
Matcha powder 8g
Sugar 20g
Eggs (2)
Milk 300ml
Melted butter 20g

Whole Azuki Beans + Cream

Heavy cream 200ml
Sugar 10–15g
Sweet simmered whole azuki beans 120–150g

Finishing

Matcha powder for dusting
Whole azuki beans for garnish

How to Make Matcha Crêpes

Sift cake flour and matcha powder into a bowl, add sugar, and mix.
In another bowl, beat the eggs and mix with milk.
Gradually add the egg mixture to the flour bowl, stirring until smooth.
Add melted butter, strain the batter, and let it rest in the fridge for 30 minutes.
Lightly oil a pan and cook thin crêpes over low to medium heat (about 15 sheets).

How to Make Whipped Cream

Add sugar to heavy cream and whip over ice water.
Whip until soft peaks form (about 80% whipped).

How to Prepare Sweet Simmered Azuki Beans

Rinse azuki beans and boil briefly without soaking, then discard the water.
Add fresh water and simmer over low heat until tender (about 40–60 minutes).
Once tender, add sugar and simmer gently to absorb sweetness.
Turn off the heat, let cool, and drain before use.

 

3:Tips for Smoothing the Outer Edge



Place the cake on a turntable to smooth evenly.
Hold the scraper vertically and press it gently against the side.
Rotate slowly with consistent pressure from front to back.
If layers are misaligned, gently press to realign.
Finish by smoothing the entire circumference once more.
If the scraper slips due to cream, wipe it clean before continuing.
